- 3 cups raw corn
- 1 Tb flour
- 2 Tb butter
- 1 cup milk
- 1/4 cup cream cheese
- chives, salt and pepper to taste
- Cook raw corn and 1 Tb flour and 2 Tb butter for 5 mins. Place the cucumbers in a colander and sprinkle with the salt. Whisk in 1 cup milk and 1/4 cup cream cheese; simmer until thickened, 15 minutes.
- Stir in chopped chives, salt and pepper to taste.
- Note: Enjoy on a summer day.
