  • 3 cups raw corn
  • 1 Tb flour
  • 2 Tb butter
  • 1 cup milk
  • 1/4 cup cream cheese
  • chives, salt and pepper to taste


  1. Cook raw corn and 1 Tb flour and 2 Tb butter for 5 mins. Place the cucumbers in a colander and sprinkle with the salt. Whisk in 1 cup milk and 1/4 cup cream cheese; simmer until thickened, 15 minutes.
  2. Stir in chopped chives, salt and pepper to taste.
  • Note: Enjoy on a summer day.
